Welcome to the forum Rachel. The second option is correct, and I usually use the minus sign (available in the symbol options of Word if you're using that).

I am trying to resolve a quandary: in text, is it best to use the math symbol or spell out the word? The most blatant example I can think of is the word "negative," which appears often in the product I am working on. It seems cleaner to me to use the symbol, but I'd like to get insight from others.
